Chef's Restaurant Even if the restaurant is slightly out of the way of the city center, connoisseurs won't hesitate to walk a little way to Thomas Compagnon's table, where he knows regularity and excellence. Established over ten years ago with his wife Virginie, the chef creates a fine Burgundian cuisine revisited, in dressings as meticulous as the place, a heart of Crisenon trout fillet cooked over a flame, tarragon mustard sorbet, vegetable composition and honey condiment, sea bass fillet and bouchot mussels, green beans, potatoes, pepper marinière emulsion; rare beef, half fig, half grape, red cabbage confit and smoked beet, pinot noir sauce; roasted veal sweetbread, fine honey, sunflower and sour squash tartlet, caramelized onion jus; and cocoa gavotte leaf, tender caramel and puffed rice, hazelnut and roasted coffee ice cream. A fine regional cellar (Rapet, Drouhin, Buisson, Jessiaume, Sauzet, Tollot-Beaut...).
