A solid address that has evolved well over time, retaining, since the takeover by Keishi Sugimura, that touch of Japanese precision and a few oriental flavors on fine French cuisine, in an elegant, hushed bourgeois interior. The €95 menu is copious (two starters, one main course), but you can also indulge in the à la carte menu to choose between the very good pâté en croûte and the tête de veau in homage to Bruno Monnoir, the previous chef of this honorable house, the pigeon Sanchez and its leg in yakitori or the fish of the arrival with a nori seaweed sabayon and saffron rice. Fine work served with distinction, a fair cellar of fine bottles.
