Gourmet Restaurant It's an interesting place to work: a well-appointed house on the Neufchâtel road, ten minutes from the town by the expressway, with a contemporary bourgeois room extended by a space opening onto the garden like a veranda. After three years here, Thibault Foulogne, who has a solid background (Kayser, Caillet, Buisset), has found a good cruising speed, with an efficient €32 menu and two proposals at €49 and €69. The presentations are still a little naive, but the know-how is there: an honest poultry mousseline with reduced jus and pickles, a well-cooked trout fregola sarda and a sorrel sauce with very little sorrel flavor, a creamy walnut tart on a slightly brittle shortbread base. The wine list is formatted by the Pierre Noble cellars, so it's not very original or personal, but it does have the merit of covering all the regions, with solid references (Kirrenbourg, Bellivière...) and a wide choice by the glass. Friendly, dedicated customer service.
