Remarkable Restaurant Martino Ruggieri has an impressive CV, including a stint as chef with Yannick Alléno at the Pavillon Ledoyen, and he didn't hesitate to set the bar very high when he set up home on rue Treilhard, in place of Dominique Bouchet's former table. In this opulent salon (from the tableware to the decorative elements), this art enthusiast offers a cuisine that perfectly blends French and Italian influences, but which sometimes seems to favor technical perfection at the expense of emotion: after a striking tomato-based amuse-bouche, the dishes follow one another, the first once again featuring tomatoes (the chef likes to remind us that he throws absolutely nothing away, going so far as to sculpt certain elements of the decor from sole skins or leftover bread to create the supports for the amuse-bouche), udon noodles, orechiette and basil before a superb, just-tempered blue lobster accompanied by a divine lobster chantilly, parsley oil, kombu and cucumber. Elegant apricot dessert (apricot jelly, butter crème montée, roasted apricot, yarrow, almond and olive oil), grand house fare (the first menu is €200), a vast and also rather expensive cellar, smooth and professional service.
