Chef's Restaurant This restaurant, close to the church of Saint-Augustin, attracts a clientele of connoisseurs who come to sample the market cuisine of chef Yohann Trique. And the à la carte dishes are reasonably priced, which also explains why: flame-grilled sardines, lemon caviar, crisp vegetables and lemon confit condiment, langoustines in thin, crispy ravioli, press juice and tamarind, scallops, melting endives, caramelized hazelnuts, beard juice and smoked pastrami, Argentine Angus beef, Kalamata olives, confit pommes grenailles, oyster mushrooms and herb condiment before a well-mastered dessert, a lemon-kiwi vacherin and almond sorbet. Julien Piot, a former wine merchant, knows how to find just the right thing in a cellar rich in references from both grands crus and small estates (Lapalu, Cotat, Barral...).
