Gourmet Restaurant Thomas Bouanich has handed over his Victoire et Thomas to Anthony Baud (Quintessence), who is taking over the space to set up a bistro-restaurant-wine bar to complement his existing business. The location is ideal, right next to the parent company, and the offer was immediately focused, a little expensive for a wine bar, but correct for the regulars of this chef with excellent mastery: marinated cauliflower salmon, fennel caramel, low-temperature farmhouse poultry, parsnip and watercress with supreme sauce, roasted pineapple with verbena ganache vanilla and yellow lemon sorbet in a €39 sequence for dinner.
