Chef's Restaurant You can't go wrong choosing this Fanal, which shines brightly on the port, right next to the large Biodiversarium aquarium. And by putting your trust in Marie-France and Pascal Borrell, knowledgeable professionals who have made their home the most interesting on the Côte vermeille. By playing the terroir card in a committed and modern way, by supporting producers (Marie-France's cart of local cheeses is superb), by giving Catalan cuisine a fine, accomplished and progressive vision. The chef makes brilliant use of Collioure anchovies, marinated in 15-year-old Banyuls vinegar and a vegetable antiboise en escabèche, offers a pleasant land-sea experience with herb-crusted rabbit, squid and pig's trotter, and also perfects his adaptation of crème catalane, lemon cinnamon and brown sugar. We commend the wine list, which focuses on the best local wines, such as Marjorie Gallet, and also offers a fine list of Banyuls and Roussillon wines (Rivesaltes, Maury...), although we regret that wine by the glass is not given greater prominence.
