Chef's Restaurant Facing the bay of Collioure, the château and the emblematic steeple of its church, Florian Rossignol, who we once knew at the helm of a neighboring restaurant, can showcase his talent with a Mediterranean-inspired cuisine, rich in fish caught just a stone's throw away and locally-grown vegetables. Morels from Saint André, squash gnocchi on a poultry jus réduit and translucent Iberian bacon are a dish in themselves before the lean, local purple artichoke on a rock fish soup sprinkled with confit garlic chips; inventive Catalan cuisine with strict respect for the products, traced and worked with precision by the chef. To finish, a pure three-course dessert with citrus ice cream and black olive purée, topped with the famous mato (Catalan fromage frais) and accompanied by a rivesaltes de vigneron. The service is top-notch, with a dedicated maître d'hôtel who is proud to introduce us to a cuisine that is full of finesse, respectful of its terroir and full of promise for the future.
