Chef's Restaurant It's an undeniable pleasure to rediscover the cuisine of Corentin Courtien, a superb local example of contemporary terroir cooking. The chef works with the product with the intelligence of the moment, with associations in relief where tradition takes on new colors, with just the right amount of intuition and know-how to imagine a harmonious experience. For lunch, the bar is already set high, with a wild boar terrine with kombu seaweed, Jerusalem artichoke siphon and cancoillotte, duck with crayon leeks, grilled potatoes with thyme and granny-smith brunoise, a beautiful trompe-l'œil cherry, cherry mousse and fermented raspberries, Caribbean chocolate ganache and chocolate-caramel sauce. The evening menu moves upmarket, with two menus at €68 and €90 (seven courses). The cellar is well-stocked with a good selection by the glass (jasnières from Christophe Croisard, quincy from Valéry Renaudat and sancerre from Pierre Cherrier). Good service.
