Like the langoustines from Brittany, baptized "demoiselles" as they were in the past, accompanied by the classic pomelo avocado duo, and enhanced by a lightly-vinegar bisque. The combinations are sometimes more daring, as with the mackerel, beet, kiwi and fresh mint, drizzled with a bonito and horseradish infusion of ribot milk.
