Chef's Restaurant This salt granary is a symbol dear to the hearts of Manceaux, an old 18th-century building that has always been part of the landscape, and which for forty years now has been home to one of the city's finest restaurants. Although the owners have come and gone, the standard and reputation have never wavered, and even today, the two toques are richly deserved. A chic, bourgeois address for special occasions, its service is inevitably a little ceremonious, but its professionalism is beyond reproach; the cuisine, for its part, exhibits great tradition. Discover (or rediscover) langoustine ravioli, spaghetti squash and langoustine cream, seared scallops, buckwheat, Guéméné andouille and cider sauce, venison fillet and autumn vegetables, roasted half-pear with Sarthe honey, crunchy caramelized angel hair, cardamom yoghurt sorbet and sherry pear gel.
