In this small village in the Sarthe region of France, Jason Le Glatin and his wife Sharon take us on a gastronomic journey, blending local terroir with the flavors of the Philippines. This four-handed cuisine is rich in emotion and meticulous craftsmanship, with just the right tastes, such as the saddle of rabbit available in two ways, just roasted or delicately fried, tatin of carrots and potato chips on a spicy mustard sauce; great art in the presentation of the plates, where the skate wing from Guilvinec is roasted under a walnut praline, a thinly sliced endive, a potato espuma and a cream of lamb's lettuce with hazelnut butter left on the table; a delicate sauce from one of the three breads of the day; a cuisine where the key words of work, precision, harmony of flavors and clarity of products are the fruit of reflection, of a marriage between two cultures in a place of sharing. The dessert of grapefruit, crystallized rose petals, baba and Sichuan pepper is an example of finesse and taste; the service is masterfully led by the voluble Julien, also creator of a rich wine list. A table with just the right balance of tastes that we leave with regret, but just a few steps away from a third toque.
