This is Carnac's most sparkling restaurant, a crossroads between the Basque country and Brittany, built by Erwann Le Pogam, a Basque at heart and a native of the region. Back at home, he's showcasing his talents in a democratic spirit, with lunch menus at €28 and round-trip trips to Biarritz at €78-96 in the evening. Along the way, successful stopovers include spider crab crumble, coral-bound skyr, buckwheat galette and barbajuan with chard, a royal langoustine from Guilvinec, civet butter, linguine with shellfish fumet and smoked eel, milk-fed lamb from the Basque region, new carrots and triquetre garlic, jus corsé and Turkish-style condiment, 72% Peruvian chocolate, roasted peanuts and hemp, ganache and salted butter caramel, kalamansi. Well-informed cellar.
