At this level, one always expects something a little serious and stilted. But Stéphane and Laëtitia Cosnier have always managed to maintain the hospitality and "vacation home" feel that sets their table apart from the rest. This hotel on the outskirts of Carnac is an insider's delight, a confidential address that has risen to the top, both for its rooms and its cuisine. The chef is truly talented, expressing a generous idea of Brittany, with a solid €78 menu featuring local cuttlefish and snacked duck foie gras, asparagus from La Torche, pot-au-feu broth and candied egg yolk, a line fish in seaweed steam, grilled brocoletti and green curry bay shellfish jus, sweetbreads gilded in salted butter, French peas, wild garlic and smoked eel, jus court, grand cru chocolate soufflé tart, roasted coffee ice cream, bitter cocoa sauce. Very fine cellar.
