Chef's Restaurant It's one of the most loyal and interesting restaurants on this part of the coast. Laetitia and Stéphane Cosnier make the resort's gastronomic evenings a success, thanks to their professionalism and a spirit that blends bourgeois chic with a "home from home" atmosphere. The chef's cuisine is in the same vein, at once familiar and sophisticated, always in good taste: red mullet à la flamme and celery foie gras in a salt crust, Vendée rabbit and octopus snacked on sand carrots with ginger and black garlic condiment, pearl juice, poached pear with spices and honey ice cream, crumble with mead sauce in a fine €78 formula. And if the atmosphere is a little more solemn than in the past, with its gastro codes, the fundamentals of those who once delighted us at the Petit Comptoir angevin are still alive and well. A fine connoisseur's cellar.
