Chef's Restaurant In this handsome contemporary building where slate overhangs granite, set in a verdant garden, it's the kitchen that takes center stage, thanks to the Breton and seafaring compositions of inspired chef Charles Moreau. His menus are beautifully composed, skilful and inventive: barbecued leeks with chickpea cream and turmeric sauce, scallops in a variation on Jerusalem artichoke and clementine, monkfish from a small boat with parsnips and grapefruit and shellfish sauce, Pornic squab with Chinese cabbage and kimchi. Everything is just right, from the cooking to the seasoning, without going astray, right down to the good apple dessert in this well-constructed and frankly honest menu for €64. Good service in this sober interior, offering a wide view through the bay windows, classic cellar.
