Chef's Restaurant Thomas Pezeril joined the Darroze galaxy in 2014, after two years at Pic, and took a four-year break at La Bijouterie in Lyon before returning in 2021 to open the restaurant at Villa La Coste, where he is now executive chef. This table is part of the estate owned by Patrick McKillen, the Irish businessman who owns the Connaught, and has come full circle. The primary intention is to introduce the surrounding greenery of Aix's hinterland to the plates, relying on a whole series of producers highlighted, in bold, on the menu. The Milanese-style risotto, seasoned with shellfish and dashes of squid ink, is thrilling, the apricot vinaigrette with white balsamic and olive oil totally transforms the dessert, and the discovery of dehydrated niçoise stone powder gives a brilliant depth to the tomatoes. The wine list will deliver its full measure beyond €200 a bottle. Precise, attentive service, idyllic setting for a summer evening.
