Nicolas Bottero continues to sublimate this corner of western Aix-en-Provence: the dining room decor has been refined, the materials are even more elegant, and the atmosphere exudes that warm sobriety that enhances the plate. In the kitchen, the spirit remains faithful to the Mediterranean and local producers: Mediterranean octopus, tomato confit, taggiasche olives and caper flowers, topped with a tomatoey aioli and homemade herbettes; or this superb dessert based on rhubarb from the Vermès family, delicately flavored with Madagascar vanilla and corn shortbread - a true signature of finesse, which makes you forget a somewhat dull veal chop with its confit vegetables. Prices are affordable for the work and quality served. Service is precise and attentive, and the cellar is more than interesting, featuring a number of old vintages and rare bottles from the region, with the sommelier advising on the more expensive "prestige" glasses.
