Gault&Millau's review 2025

Sévan Parc Hôtel is a veritable hotel complex on the ring road, extending its 70s architecture behind the beautiful "HS" monogrammed gates. It's here that young chef Christophe Pulizzi set up shop a year ago, developing a contemporary, fairly consensual cuisine on a short menu of standards: perfect egg, risotto, butcher's cut, the macaroni gratin with lobster "from my childhood" suggesting a pleasant past. Dessert in the same vein (pavlova, millefeuille, chocolate). Two blind menus, which we'd like to think are more personal, at €48 and €60 complete the offer.
