Gault&Millau's review 2026

The turnaround in Villa Gallici's cuisine of late is undeniably beneficial. The somewhat pompous style of the 2000s has been replaced by a finer, more precise vision, with a clear Italian influence, not only in the products (Piedmont hazelnuts, Bronte pistachios...) but in the very conception, not so much saucier, more on the product and texture, and with a sharp graphic sense, led by chef Christophe Gavot. This is also reflected in the atmosphere of this pretty villa away from the center - fortunately with valet parking - with its stylish setting and delightful terrace under the big plane tree. In these well-orchestrated sequences, we can appreciate a certain audacity in the creation of onion, beef shank and onion consommé, a fine technique on grilled bass and eggplant caponata, with a gourmet octopus daube, the creamy anchovy served on the side seeming a little superfluous. A pleasant citrus dessert with fregola sarda, like a rice pudding, hazelnut and bergamot sorbet, a wine cellar which is on the whole quite expensive, and which should be broadened a little to include more accessible, regional bottles. The service, rather strict as if coming from a Catholic institution, but also precise and smiling, manages to relax as the meal progresses.
