The Rothschilds' grand hunting lodge has been given a new name, Jeanne and the Forest (regulars of Lily and the Valley, on the Var coast, won't be out of place), while at the same time finding a new modernity in the château's beautiful setting. With the previous chef out of the way, the cuisine is moving towards simple, focused plates, in the style of top-of-the-range hotel cuisine: foie gras mi-cuit fruits rouges, yellowtail carpaccio with ponzu sauce, roast pike-perch with red curry pak choï, guinea fowl supreme with miso peanut cauliflower and good pastry desserts, such as chocolate timut cherry.
