Chef's Restaurant We always enjoy sampling the cuisine of Richard Balma, who likes to play with the textures of vegetables while marrying them harmoniously. This allows regulars to find a setting and cuisine that's reassuring but always evolving: skate wing, chioggia beet, Colombian shrimp and pitahaya, roasted Dieppe scallops, arabica coffee celeriac, blood carrot, leek and Corsican clementine, yellow capon leg, Jerusalem artichokes, split peas and rutabaga, before a dessert that's a little less exciting: dark chocolate apple, lemon caviar, Espelette pepper cookie. A small, relevant wine list and friendly service.
