Chef's Restaurant A popular address for Manceaux residents in search of elegance and refinement, away from the city center. At the helm, chef Jean-Sébastien Monné brings his creativity to bear on products selected according to the season. Like the langoustines from Brittany, baptized "demoiselles" as they were in the past, accompanied by the classic pomelo avocado duo, and enhanced by a lightly-vinegar bisque. The combinations are sometimes more daring, as with the mackerel, beet, kiwi and fresh mint, drizzled with a bonito and horseradish infusion of ribot milk. The front-of-house team is led by Élodie, and operates with care in a bright, well-kept setting. An eclectic, high-quality cellar, with prices expected for fine labels.
