Chef's Restaurant The train station district may not be the most picturesque in town, but its frequentation leads to good discoveries, such as this serious Insouciant, where you'll have a great time with 2 toques. Corentin and Madeline, already singled out by the Guide, are establishing their reputation, and the young chef is attentive to the product, which is always at the center of the plate: Sarthe lamb pressed with rosemary and fig compote, line loin from La Rochelle with a dieppoise shellfish sauce or black Le Mans hen stuffed with mushrooms and roasted hazelnuts, each dish showing mastery of cooking, sauces and seasonings. A fine dessert of Sarthe pear with a coconut mousse, pollen shortbread and pear verbena marmalade. Prices are still very reasonable for this service, a classic cellar that could be made even better.
