Cuisine handed down from generation to generation - Maison Troisgros

Freshly named Gault&Millau's Chef of the Year 2026, 39-year-old César Troisgros brilliantly continues the story of a dynasty that has been shaping French gastronomy for nearly a century. At the helm of Le Bois sans feuilles, in Ouches, the chef embodies the fourth generation of the Troisgros family, creating a vibrant cuisine based on acidity, spiciness, toast and smokiness - a signature that is unmistakably Troisgros. Leaving their historic Roanne address behind, the family has moved their pots and pans to a superb Italian-style villa bordered by orchards and a pond. In addition to the gourmet restaurant, the estate is home to a number of beautiful rooms, divided between the Manoir and the Maison des Kakis. For tribes, the hacienda-style Farmhouse offers mezzanine rooms designed as cabins.

In Provence, the Domaine de Baumanière

A legendary address at the foot of the Baux-de-Provence cliff, Baumanière has been writing its legend since the 1950s. Still in the hands of Jean-André Charial, his Oustau - now led by the brilliant Glenn Viel - brilliantly reinvents this historic restaurant, while Michel Hulin offers refined regional cuisine at La Cabro d'Or. But gastronomy is just one of the many pleasures on offer here: a 20-hectare estate of nurturing gardens, beehives and kitchen gardens, three swimming pools, a splendid spa and 53 rooms and suites spread across an 18th-century manor house, a 17th-century mas and two more contemporary buildings. A rare interlude, like a dreamy Provence.

Fleur de Loire in the Loire Valley

We might as well say it right off the bat: this rare place is instantly seductive, set on a belvedere above the Loire and offering a masterly view of the historic bridge and Blois cathedral. Enjoy Christophe Hay's remarkably precise cuisine, which magnifies the products of the Loire Valley and river fish, including an unforgettable carp à la Chambord. Depending on your mood, you can dine at the gourmet Fleur de Loire or the more casual L'Amour Blanc. But the experience would not be complete without a night in the former hospice reinvented by Caroline Tissier: luxurious rooms, large outdoor pool... An exceptional stopover along the royal river.

In Burgundy, La Côte Saint-Jacques & Spa

On the peaceful banks of the Yonne, this country retreat cultivates a chic country charm with its stone walls, large fireplace and 22 rooms and suites opening onto vast terraces. In this warm setting, you'll discover the exceptional cuisine of Jean-Michel Lorain and his nephew Alexandre Bondoux, who reinvent Burgundy's terroir with finesse - as in their signature poularde de Bresse steamed in champagne. The experience alone is worth the trip, but the stay naturally extends to the sumptuous 800 m² spa, with indoor pool and hammam, before a stroll around Joigny or a jaunt to the neighboring vineyards.

On the shores of Lake Annecy, Auberge du Père Bise

Since 2017, Magali and Jean Sulpice have breathed new life into this legendary Talloires address, set like a dream on the shores of Lake Annecy. Regulars, often won over on their first visit, come back for Jean Sulpice's precise, inspired cuisine, which magnifies the Savoyard terroir. fillets of perch with cabbage, venison spiced up with gentian and juniper, not forgetting the Haute-Savoie dishes revisited at Bistrot 1903, including a memorable crayfish gratin. To prolong the enchantment, the 23 rooms and suites envelop their guests in softness: blond wood furnishings, caressing light, hushed tones and splendid lake views. The spa completes the experience, with a hammam, Jacuzzi and elegant swimming pool, where the serenity of the place is reflected.

One of France's most celebrated restaurants, La Marine nonetheless cultivates a rare atmosphere, both family-friendly and relaxed. In the Loire Valley, Les Sources de Cheverny

In the heart of a 44-hectare estate woven with ancient forests, vineyards and a period château, the little sisterur of Les Sources de Caudalie offers 49 rooms and suites spread across the estate's buildings, like a chic, bucolic hamlet. Here, the day unfolds as pleasures unfold: forest walks with boots on, horseback riding, bike rides, tastings of Loire wines or bistronomic interludes at L'Auberge. In the evening, the experience reaches its peak at Le Favori, where Pierre Frindel's cuisine is inspired by the Loire Valley's nourishing soil. Ô Plum'ART & Le Jardin des Plumes, a gourmet getaway in Giverny

just a stone's throw from the Claude Monet Foundation, David Gallienne - winner of Top Chef 2020 - plants his universe between gastronomy and Norman art de vivre. After dinner at the Jardin des Plumes, guests can extend the evening at Ô Plum'ART, a guesthouse set in a former 1900 dairy transformed into a neo-rustic cocoon. The five contemporary rooms feature immaculate whites, antique furniture and large windows opening onto the wooded garden.
