Out of time, but not frozen, this magnificent 5-star estate is a haven of peace just 20 minutes from Arles. The period architecture, gardens and fountains welcome you for a privileged moment, resolutely turned towards Provence, perfuming the atmosphere with a scent of eternity. Michel Hulin, who knew Les Prés d'Eugénie and Les Crayères, is a man of conviction, who has been passing on his love of the terroir for twenty years, through an identifiable regional continuity in both product and technique. The approach is assured by the know-how and talent for recomposition, which applies to wild shrimp revisited in a ceviche like tartar, acidulated by fennel and cucumber with sudachi, softened by a charming sorbet with frosted herbs, to beautiful Mediterranean red tuna seared a la plancha and its airy compression of watermelon with verbena, to strawberry marinated in Baux oil, elegant and gourmet, with concentrated juice and an almond and candied olive tartlet. The cellar has its merits.
