One of the great vintages of the turn of the century. The finest Chardonnays and Pinots Noirs are used in the blend. The color is crystalline, ranging from golden to silvery with luminous green highlights. The mousse is dense when served, and the bubbles are fine and lazy in the glass. A good sign! The nose is both vinous and fine, with aromas of peach, stewed pear, coffee beans, smoke, medlar jelly, dried fruit and fresh butter. Endless. On the palate, the creamy smoothness of the mousse is matched by a rich body and thirst-quenching bubbles. Same notes as on the nose, with a hint of white truffle, honey and quince paste. Long, very long. Superb. A great shellfish for a happy marriage.
