Winery presentation by Gault&Millau
In 1999, Fabrice Pouillon took over the estate founded by his grandfather in 1947. He reorganized the 7.7 ha of vineyards by replanting massal selections and identifying 42 plots cultivated according to soil type. Organic farming practices are in place, including horse-drawn plowing, farm-made compost, respect for natural rhythms, and limited yields. These techniques are reinforced by regenerative agriculture (maintenance of cover crops). In the cellar, the estate uses indigenous yeasts for fermentation, which it cultivates in an off-site laboratory. The “Fabrice Pouillon” method—based on indigenous yeasts, oak barrels, and small tanks—is applied to all of its wines.
