Under the supervision of Fabrice and James Pouillon, this 15-herctare vineyard, growing mostly pinot noir and pinot meunier is spread over plots in grand crus of Aÿ as well as four premiers crus such as Mareuil-sur-Aÿ and Tauxières. James Pouillon does not hesitate to turn himself towards traditional methods such as horse ploughing. His ultimate goal being to adapt his practices to each plot even though they may require different treatments. The house experiments with new wine making techniques in barrels and other methods to stir the lees. All the cuvées are quite remarkable.
