Dried fruit and spices share a shimmering, complex bouquet of lovely ripeness. Freshness dominates in a refined, yet not lacking in personality and tannic structure, with aromas of coconut cake and rosemary-roasted pineapple. On the palate, the juice is beautifully ripe and structured, with wood adding fullness and velvety texture. Intoxicating aromas of roasted fruit and spices follow through to an intense, rich finish. A gourmet wine that goes equally well with a mature Galician beef tomahawk, a roasted lobster or a chocolate dessert.

In 1999, Fabrice Pouillon took over the estate founded by his grandfather in 1947. He reorganized the 7.7 ha of vineyards by replanting massal selections and identifying 42 plots cultivated according to soil type. Organic farming practices are in place, including horse-drawn plowing, farm-made compost, respect for natural rhythms, and limited yields. These techniques are reinforced by regenerative agriculture (maintenance of cover crops). In the cellar, the estate uses indigenous yeasts for fermentation, which it cultivates in an off-site laboratory. The “Fabrice Pouillon” method—based on indigenous yeasts, oak barrels, and small tanks—is applied to all of its wines.
