Magnificent gold color for this 2012, which spent more than 8 years in the cellar before revealing itself. The nose is superb: finely toasted, it preserves a clean, pure fruitiness with notes of pear, vine peach, apricot and a hint of the exotic, reminiscent of white pineapple. The palate is equally successful. Full and juicy at the same time, complex and racy, with notes of mushroom and white chalk. On the finish, the wine lengthens perfectly, imprinting the palate with multiple flavors. A great champagne for the table, to be opened classically with caramelized veal sweetbreads or poultry supremes with chanterelle mushrooms.
