Remarkable Restaurant Just over fifteen years after becoming one of the first female chefs to win the Grande de Demain title, Adeline Grattard has never betrayed what has been her strength and originality all these years: her very own vision of cuisine, at the confluence of Asia (with a strong Chinese accent) and France, a cuisine that is both gourmet and delicate, subtle and never giving in to the easy way out. To discover it, you (unfortunately) have to accept the principle of the hidden menu, but fortunately the surprises are always good, with mullet and sea urchin sashimi married with chestnut and artichoke, sweet and sour scallops, endives and issan salad and char siu pork, marinated eggplant and black bean sauce. A lovely dessert of sorrel soup, orgeat sorbet, osmanthus jelly, pineapple and mango, with a hushed service and ambience, in the image of a cuisine we'd sometimes like to see take more risks. The wine cellar is rather classic, but it's worth indulging in the well-thought-out food and tea pairing.
