Chef : 2 restaurantsAs a child, Adeline Grattard already dreamed of being a cook, when so many others imagine themselves as doctors or teachers. However, this Burgundian, who was a good pupil at school, ended up turning to classical studies, eventually obtaining a degree in German... and finally abandoning the idea of joining the teaching profession to enroll at the Ecole Ferrandi.
Once she'd graduated, the headstrong young chef worked in the kitchens of Pascal Barbot and Flora Mikula, and went on to open her own restaurant, Yam Tcha, with her husband Chiwah Chan, a Hong Kong-born tea expert. It's 2009, Adeline has just turned 37, and things are about to get very fast indeed, including the title of Grand de Demain in our 2010 edition.
Her cuisine? At the confluence of French and Chinese influences, spontaneous, instinctive and gourmet, but also inspired by the many trips to the West Indies she made as a child with her family.
In 2014, feeling a little cramped in their restaurant on Rue Sauval, the couple decided to move a little further down the road, to Rue Saint-Honoré. Fortunately, the magic hasn't evaporated in the meantime, with Adeline Grattard's cuisine proving as unpredictable and seductive as ever.
