Like many of her multi-award-winning colleagues, the most famous of today's chefs has spread her name and brand all over the globe. While recent months have seen a downward trend following the closure of several addresses, including the one in London, the Parisian Dame de Pic remains very much alive, offering a foretaste of what you might find if you jumped on the first TGV to Valence: tarbouriech oysters, Japanese barbecued beet, seaweed, lovage and bergamot, parsnip confit, apple Reine des Reinettes black garlic and beer, warm sobacha and dill mayonnaise, beautiful scallops married with pig's trotter, celery, squid tagliatelle and a gourmet beurre blanc with juniper berry. Each dish is meticulously prepared, and the dishes are both sober and elegant, but sometimes lack that touch of madness and parti-pris that makes the difference, as if it were important not to offend an international clientele. Service is efficient, but sometimes distant, and the cellar is logically consensual.
