Remarkable Restaurant The people of Marseilles, who put their trust in him and follow him, have bet well. Ludovic Turac, always listening, always evolving, has no intention of stopping there, and offers an interesting crossroads of influences in this chic contemporary dining room above the Vieux Port. In two menus and eight dishes (which he would be well advised to put on a menu instead of confining them to set menus), he invents two distinct journeys, one more local, with lobster in foot and package reduction and grilled st. Pierre squid in gardianne concentrate, the other more trans-Mediterranean, to the Armenia of his origins (the squab with ras el hanout "Marrakech", the artichoke mint smoked pike roe christened "Erevan"). His dishes are often brilliant and always sincere, set with various tributes to Marseille or his family, with a few solid landmarks like cod in aïoli or red mullet in bouille-abaisse popularized by his mentor Lionel Lévy, whom he succeeded. The cellar is not the house's greatest asset, but it has grown stronger and more balanced over time, with interesting bottles all over the place.
