Wedged between a souvenir store and a brasserie, you could almost miss the entrance to this grand house, as discreet in appearance as it is flamboyant behind the walls. Once at the top of the staircase, a world view of Marseille unfolds: the Old Port, Notre-Dame-de-la-Garde, the Citadelle, the Palais du Pharo and the Mediterranean in the distance. What better way to introduce Ludovic Turac's cuisine? Entirely dedicated to his city and its origins, he combines cultures in a crossroads of ideas that is always fine and memorable. De la terre à la mer offers an elaborate first sequence, a journey along the coast where we discover grilled oysters from the Etang de Thau in a work based around merguez in consommé and cumin, with a light gribiche sauce, a return to basics with aïoli, pearly cod, shellfish and seafood in parsley, a vegetable spoon spiced up with zaatar, the chef's signature dish, the red mullet "bouille-abaisse" and the elegant trompe-l'oeil of potatoes and rouille in calisson d'Aix, the grand dessert of seasonal fruits expressing a beautiful palette of sensations around acidity, without ever falling into aggressiveness, blending with balance, sweetness and freshness. A well-stocked cellar, with many great references and more confidential wines.
