He's not even 40 years old, yet he's already got a full CV. Thomas Estrader has experience of the great houses: Savoy, Anton, Trochon... Enough to give him the confidence to set up on his own, and offer Marseille a new high-level address. His table on rue Fortia is a nugget, with its chic troquet atmosphere, Art Deco and beautiful furniture inspired by the bistro tradition. Plates live up to expectations: exemplary octopus carpaccio, grilled miso salmon with ginger butter, grilled duck hearts with devil's sauce, grilled Duroc pig spider, warm chocolate mousse with hazelnut ice cream. Good cellar selection.
