Gourmet Restaurant Thomas Fridlund's bistro is less about the Mediterranean coast and more about earthy flavors, going up the Rhône or the Potomac, Lyon tradition and a few touches of the other side of the Atlantic. Of course, there's the signature chicken egg, cooked at 64°C like an egg meurette, pulled pork in a goat-mustard tartlet with crunchy vegetables, a back of cod marinated in citrus fruits, smoked mussels and marinière sauce, steamed winter vegetables, smoked pork ribs marinated in maple syrup, confit potatoes and grilled corn cream, homemade barbecue sauce, a chocolate and yuzu buchette. Cellar adapted.
