Entering Petrossian carries with it an almost symbolic dimension: the discovery of an exiled luxury that has become a Parisian heritage. The name evokes history, transmission and a certain aristocracy of taste. On arrival, you recognize the elegant discretion of the 7ᵉ arrondissement, a stone's throw from Les Invalides. A sober façade that suggests mystery while inspiring confidence. Nothing ostentatious: restraint seems to be a language here. Inside, comfort is immediate. Thick carpeting, warm wood, enveloping seats, subdued lighting. The atmosphere is hushed, calm and conducive to tasting. However, on this slow Friday evening, this silence takes on a colder, almost distant tone. The place envelops, but doesn't totally warm. The welcome is decent, but not particularly warm. The table is indicated rather than accompanied. The service is professional and efficient, sometimes even pressing, especially when ordering, which slightly alters the fluidity of the experience. On the plate, the product also stands out. The Pom' Impériale with caviar is an obvious mastery: fat, iodine, balance and delicacy. The salmon, of great finesse, reveals a precise cut and indisputable quality. A few zakouskis to share add a touch of whimsy to this perfectly controlled universe. The baba vodka is a generous extension of the house's Russo-Parisian identity. The seasonings are just right, and the visual and taste coherent. The wine list is structured, reassuring and rather classic. Prices are high, but in keeping with the standing and quality of the products. Finally, the experience offers high-quality products in a beautiful setting. But emotion remains measured. What's missing is human warmth, a more assertive embodiment, a surprise capable of transforming the moment into a lasting memory.
