Tomy Gousset continues to build on the success of his early days, nearly eight years ago, and we're delighted. The inspiration is intact, the personality still expresses itself, and the beautiful menu-card with its wide choice, admittedly at €80, is well worth its two toques, showing as much mastery of classic techniques as an imagination rarely at half-mast, with a fine use of herbs and spices: tuna tartare with yuzu and blackberry, cucumber and trout roe, roast hake and cockles, crushed yellow zucchinis with curried shellfish butter, poultry pithiviers, artichoke, pork, pan-fried foie gras, pickled chanterelles, a pleasant strawberry-rhubarb dessert, strawberry sorbet with verbena pepper, Greek yogurt cream. Nice setting, good service, attractive lunch menu at €49.
