Everything on the menu is well organized, the chef has the know-how and the catalog is well balanced between tradition and modernity: ceviche of sea bass marinated in passion and coriander, roast lean Noirmoutier potato confit with nori, oyster tartar, strawberry vacherin. The 5-course evening menu, priced at €95, provides the essentials, and the service is very well coordinated.
