Chef Sébastien Bonavita's domain is a beautiful, bright dining room overlooking the sea, and a terrace that's a real eye-opener, but the smell of iodine whets the appetite. Whether it's grilled sea bass with fennel and star anise, roasted turbot with smoked grenailles, seaweed dust and salmon egg, roast pigeon with rhubarb, red onion and baby carrots, or sweetbreads contised with scampi, cauliflower and lemon pulp, it's a cuisine full of power and flavors, skilfully balanced to achieve the balance that defines the chef's talent. Patrick Hoorelbeck's desserts round off this gastronomic experience in style. A fine selection of Bordeaux estates and impeccable service.
