We all know how demanding the people of Sablais are, appreciating good service, precise cooking and clear plates. Here, the mistress of the house looks after her customers as if they were old acquaintances, in a calm and controlled atmosphere, with parquet flooring, white tablecloths, fine crockery and exemplary classics on the plate. There's a choice between a €40 and a €50 menu, where the boudin blanc is enhanced by a leek and chorizo fondue, the cod is braised with beurre mousseux, curry and tarragon, and an attractive veal head with parsley and gribiche sauce recalls the traditions. A well-matched cellar, with a dozen Burgundies, Rhônes and Bordeaux.
