Gault&Millau's review 2025

Located on the banks of the L'Occitane since 1982, this 4-star hotel has been fully equipped and renovated, with rooms and a heated swimming pool, as well as a fine bistronomic cuisine by Aurélien Lagorsse. This year, Lagorsse's dining room has been completely redesigned in an elegant, bourgeois style, with carpets, wide seats and wood for a chic, hushed atmosphere. The chef has found the right setting to defend his ideas, with regional and contemporary cuisine of a high standard, such as lobster salad with autumn vegetables and pumpkin seed oil vinaigrette, herb-crusted monkfish back, bean garbure and light curry sauce, pan-seared sweetbreads with morel mushroom and yellow wine sauce. Fine cellar with over 300 references.
