Gault&Millau's review 2025

Jean-Marie Laplace is showing ambition, and we're delighted. The restaurant is moving upmarket, both in the kitchen and the dining room, and the project is moving in the right direction. With the help of his son Dimitri, he is creating an experience that will bring people together and adapt to all circumstances, from practical lunches to special occasions. Compositions oscillate between contemporary bistronomy and semi-gastronomy, sometimes with a complexity that doesn't need to be: a pan-fried Roscoff snails and octopus with vegetables, a perfect guinea fowl with its jus and elegant cannelloni, verging on 2 toques, all textural contrasts and a lovely roundness, products of fine quality. Finally, a remarkable 64% chocolate cream, spiced up with candied kalamansi, kumquat and mandarin citrus. The cellar deserves to be a little more adventurous. A fine selection of spirits.
