Chef's Restaurant Christophe Marchais's restaurant is one of those places that keep France's medium-sized towns alive, where people greet each other at table, where families, shopkeepers, notables and childhood friends rub shoulders. Lively and regional, the chef's cuisine reconciles tradition and modernity to bring people together; in this joyous mood, the pressé of foie gras and pig's head in grilled onion jelly, mushroom duxelles with truffle oil, snacked Normandy scallops, cream of mushroom soup, charlotte purée with semi-salted butter, lemon caviar, black garlic and roasted rapeseed oil, a wild boar confit with 48-hour chinon, quince ketchup, butternut hummus, herb hash and guindillas, an apple from Saint-Martin-d'Auxigny confit tiramisu style and fig sorbet. Good cellar.
