A good connoisseur's cellar to discover the island's vineyards, quality products treated with care by an elaborate and inventive cuisine: this is the winning combo presented on the Place du Marché, and justifies the toque and the rather hefty prices: squid jus with squid ink, aziminu updated with fennel and saffron rouille potato and blue crab bisque, low-temperature veal filet jus à la diable fritto misto with mushrooms... Equally sophisticated desserts, pommes confites with salted butter caramel, chocolate hazelnut soufflé..
