Chef's Restaurant With Jean-Christophe Rizet leaving at the end of the winter, it's Lorenzo de Girolamo who is now running the kitchen for Jacky Ribault. The philosophy remains the same: fine work, French cuisine and seasonal products enhanced by flavors from elsewhere. The decor of the dining room is in harmony with the dishes: an incredible world of plants, with majestic bouquets on the walls and ceilings, blending into an elegant, harmonious ambience to whet the appetite: green bean salad, sea bream, lovage granita, aster or veal quasi with vadouvan, grilled eggplant caviar, miso-lacquered eggplant, veal jus reduced and sliced with eggplant jus, marinated Datterino tomato, tomato water foam, bread tuile, watercress gel... Lots of greenery and nature in a studied and elegant presentation, equally distinguished service, classic cellar a little expensive.
