The young Breton chef behind this new address, Bastien Djait, has a prestigious and eclectic background, from the Mandarin to the Plaza Athénée, via Mory Sacko, and is on the right track, close to the Gare du Nord and Gare de l'Est stations. In keeping with the trend towards eco-responsible, French-produced cuisine, he offers three well-balanced menus: a pretty, thin vegetarian tartlet, butternut, vegetarian pimento, agastache, rougail sauce, lentil salad with onion soup and sweet onion cream, cod, hure and salad of criste-marine and salicornes, flame-cooked fillets of lisette, garum sauce and seaweed oil. Ideas and products without luxury but of quality, such as Landes poultry, corn in different textures, camelina oil, ending with poached pear in sorrel syrup, sumac crumble. Very friendly service from a young manager who has worked at Alleno's. A developing wine list, well adapted, with a small selection by the glass.
