Philippe Gauffre welcomes his guests with the hospitality of a private host, delivering a structured culinary proposition in which each ingredient finds its justification. The rather banal exterior is deceptive: the real discovery comes with the first tasting. The starter reveals precise technical mastery: peas, broad beans and asparagus are articulated around a poached egg, with a hint of wasabi adding an unexpected dimension. The vinaigrette, just the right amount, unifies the whole without masking the textures. The line hake is cooked to perfection. The chimichurri-like marinade of fresh herbs structures the dish, while the summer vegetables with coriander harmoniously complete the proposal. The dessert confirms this thoughtful approach: roasted melon with honey and rosemary, madeleine cookie and passion fruit sorbet create a coherent sweet-tart balance, punctuated by the woody notes of rosemary. Service is discreet and attentive. The wine list, centered on Bordeaux with a few regional references, offers a relevant selection at measured prices.
