Chef's Restaurant Thomas Morel learned a lot in Denis Franc's time, but today, it's that glorious Pavillon that owes him as much for maintaining its reputation as the other way around. In a fine classical vein, the chef makes the pleasure last and maintains his toques with clean-cut dishes, featuring prestigious products chosen with knowledge: pearly langoustines and Petrossian caviar in pil-pil sauce, sweetbread heart with grilled oysters and pommes soufflées, Couteaux-style hare à la royale, lemon in sugar soufflé cookie joconde citrus tartar espuma yoghurt tarragon sorbet. Eight-course menu €120, four-step lunch option €60, large Bordeaux cellar.
