He wanted it so badly. Jean-Luc Rocha has finally opened his own restaurant at the gateway to the Parc Bordelais, on the Le Bouscat side. In this contemporary decor, nicely redecorated with orange accents, with a small terrace for sunny days, you'll feel right at home. The MOF chef, who we met at Château Cordeillan-Bages, is able to practice the cuisine he loves and which resembles him, generous, tasty, in a spirit of conviviality and sharing. His technique, talent and know-how are undeniable, even scientifically proven by his temperamental dishes: glazed potato soup, marinated anchovies (wonders from Cantabria), served with a crisp, gourmet croque, beautifully cooked cod concise with chorizo, vegetable risotto with parmesan and mascarpone, emulsified sauce lightly creamed with cockle broth, puffed rice, noble rusticity of Angus beef, potato galette with peasant bacon, green vegetables, beef fat jus, with those potato "peelings" to nibble on with your fingertips... A "chef's" version of the Paris-Brest dessert, reworked as a "Bordeaux-Bouscat", with gianduja cream and grilled apricots. Room manager is Guillaume Carpel, a regular at fine establishments such as Château Troplong Mondot and Les Sources de Caudalie. Wine list under construction, mostly regional.
