The menu is short and to the point, both for lunch and dinner, with sure-fire dishes in a well-rehearsed, contemporary sequence: smoked trout with vegetable tabbouleh and capers, scallops with kohlrabi and miso, fish of the day with potato and watercress, buckwheat apple and parsley...
